WHAT HAPPENS WHEN WE EAT HIGH GLYCEMIC INDEX FOODS?

The bloodstream is flooded with glucose. The pancreas responds to this high level of glucose in the blood by secreting insulin by the bucket load to assist the glucose in entering our cells, where some of it is burned as energy. Unfortunately, so much glucose is crammed into the cells that it can’t all be used and ends up being stored as fat, particularly abdominal fat.

Increased levels of insulin also raise your triglycerides and interfere with kidneys function, leading to higher blood pressure. To make matters worse, you can develop a condition called insulin resistance, which means that your cells respond poorly to insulin. The combined effects of insulin resistance put you at risk of diabetes, heart disease, stroke, and other conditions.
